What changes when you convert JPG to GIF
GIF is lossless, but it cannot restore what JPG already discarded. The output will be larger than the input and no sharper — you are preserving the current state, not recovering the original.
GIF is limited to 256 colours, so photographic images come out visibly banded. It is the right target for flat graphics and the wrong one for photographs.
